DEXTER BEEF

The quality of Dexter beef is acknowledged by top chefs and has won taste awards for its outstanding flavour. Dexter beef appears regularly on TV cooking programmes, is available across the country, is the best beef around yet is still little known. Yes, Pedigree Dexter beef, which comes in smaller family sized joints and cuts, cooks superbly because of the excellent marbling and eats like a dream.

The meat is quite superb, fine-grained and well marbled. The meat to bone ratio is also very good and the joints are well proportioned. The carcase is the perfect size for the family freezer.

Full Traceability

We produce beef from 100% Dexter animals and in most cases these will be registered or birth notified to the Dexter Cattle Society,   who operate a quality assurance mark. We do cross our cows with other cattle but the calves from these crosses are sold through the live ring. Where appropriate,each pack of our beef carries the Society’s Certification Mark assuring you of its authenticity and provenance.

Low Food Miles

These cattle are either born and raised on the farm or have been bought in as weaned calves, and these will have been collected by us in person. We take them ourselves to the abbatoir in Lockerbie to keep stress to a minimum. The carcase is matured in the traditional way before it is expertly cut and packed for you to enjoy.

Quality Product

Our cattle have been raised in a sustainable and ethical manner. Our beef is not mass produced yet provides real value for money. From the beginning of the journey to the very end we never compromise on quality as we  believe that is something that keeps our loyal customers returning to us time after time.

Our animals are fed on an almost entirely grass based diet, free grazing in the summer months and preserved in the form of silage and hay during the winter. They have access to mineral licks and get the smell of a bucket once in a while to make sure that they are keen to come and see us when we call them. Calves stay with their mothers up until 7-8 months of age when they are separated to allow time for the cow to recover for the next calf.

We are not organic and follow a health plan prepared in consultation with our vets, the animals are vaccinated as appropriate and where necessary are treated as advised by the vets, they require very little in the way of treatment.

We typically kill animals at about 29 months of age which gives them time to develop a good degree of finish and flavour.

We work together with a local butcher who will typically hang the carcase for 21 days to mature prior to cutting, we supply him a list of cutting instructions and he does the rest, we deliver locally ourselves.

How can I buy?

Just visit the product page – we do not operate a farm shop and our beef is sold direct, generally by internet contact, when a beast is coming ready for sale we will advertise it on facebook etc. Should you decide to place a request, this gives you the opportunity to specify any cutting/packing preferences in advance.

Our preferred option is to sell in bulk packages which provide enough beef to keep a family going for quite a while, wherever possible we will deliver these ourselves, generally within a day of the butcher releasing the beef, however for those further afield we also offer standard boxes as listed which can be sent by courier and we will quite happily put together a box of your choosing given sufficient notice.

I appreciate that buying anything for the very first time is something of a ‘leap of faith’ and bulk buying is particularly daunting, but we will happily put together a small box for you to try – with delivery at cost.
